To achieve high-quality wine, you have to start with high-quality grapes, which is why viticulture is so important. The winery has 42 hectares planted with the approved Tempranillo, Merlot, Garnacha, and Cabernet Sauvignon varieties, planted with a 2.25 x 1.50 m planting area.

They are trained on double cordon trellises with a load of 2.5 kg per vine. To achieve this load of bunches close to veraison, thinning is carried out, leaving the best bunches evenly distributed throughout the vine. The shoots are trimmed so that the sap can be used to ripen them rather than for vegetative growth.

If thinning is not carried out at this time, it can affect the plant's vegetative cycle, increasing vigor for the following year or promoting excessive berry growth, leading to color dilution. It is important to ensure that there is sufficient leaf mass around the bunches to protect them from the midday heat waves that occur in this climate.

Low rainfall makes it necessary to use drip irrigation, properly programmed to avoid excess water and promote proper fruit ripening.

From veraison, which varies depending on the variety, ripening is monitored weekly until closer to the harvest, when this monitoring is more continuous. In this area, due to the altitude and climatic conditions, bud break occurs a month earlier than in other regions. The harvest takes place in September.

The harvest is carried out manually, picking only the bunches that are in perfect phytosanitary and ripe condition. They are transported in 10-kg boxes to the winery, where the best bunches are then manually selected before being milled.

Thanks to these vine monitoring efforts in the field, we have excellent raw materials for making wine. Our wines ferment separately in stainless steel tanks at a controlled temperature of approximately 28°C, followed by maceration with the skins for approximately 25 days. This is followed by carbonic malolactic fermentation.

To complete the process, the wines destined for aging are transferred directly to French and American oak barrels, then the different wines are blended, and finally, they are bottled.
